Chinetsu Coffee
A small sanctuary for coffee in the heart of Waita Onsen. Here, a delicate ritual unfolds, involving a meticulous 50-degree cleansing of green coffee beans followed by roasting through geothermal heat. A truly unique process, hard to find anywhere else in the world.
In the lush heart of Kyushu, a region known for its many onsen, lies Oguni Village. Here, amidst the embrace of the Aso Volcano and the Kuju Volcano, you'll find onsen areas such as Kurokawa Onsen, Tsuetate Onsen, and Waita Onsen.
Nestled at the foot of Mt. Waita in Oguni Town, this charming village is home to six distinct onsen, each imbued with its own unique mineral essence. Beyond the soothing waters lies a realm of further enchantment, including geothermal cooking, heating, and power generation that support everyday life. These elements intertwine to create a community living in harmony with the rhythms of geothermal energy.
Bathed in 50-degree geothermal waters, the green beans are gently cleansed, purging them of impurities and preserving their innate flavors.
(Most coffee beans are savored without being cleaned/washed after local cultivation.)
Geothermal steam, a guardian of flavors, prevents half-roasted coffee beans while amplifying the coffee's natural sweetness and umami.
We do not brew coffee using freshly roasted beans. Immediately after roasting, beans contain excess carbon acid gas and lack flavor integration. Therefore, we allow our beans to mature for approximately one week before brewing (optimal brewing time is one week to one month).
